- 1 tomato
- 2 eggs
- 1 burrito size tortilla
Toppings
- ⅓ cup shredded cheese
- ⅓ cup sour cream
Spray skillet with cooking spray and set over medium-low heat.
Slice the tomato and arrange it in the skillet, season with salt and pepper.
In a separate bowl, beat the eggs. Then pour them into the skillet covering the tomato slices. Reduce the heat to low.
When the edges are firm and the center still jiggly, place the tortilla. Press down gently. Let it cook for about 3 to 5 minutes, then flip onto the serving plate.
Spread toppings and serve.
I used a burrito tortilla because my skillet is 12in. You can use whatever size will cover yours.
The topping listed are optional, you can leave it plain or add whatever you have at hand at home.
