Breakfast Pizza

I love pizza! I mean, who doesn’t? I am totally down for New York style. I absolutely love the thin cheese slice with grease dripping down the sides. Just writing about it makes my mouth watery. More than once after pizza nights, I find myself eating the leftovers for breakfast. Even tho they were intended to be saved for lunch. Some other times I just want pizza for breakfast! That’s when this simple recipe comes in handy.

By definition, a pizza is a savory Italian dish consisting of flattened dough topped with tomatoes, cheese, and other ingredients. So don’t let the naysayers call this a burrito. It is not. Just because you are using a tortilla, it doesn’t make it a Mexican dish. If anything, the use of the tortilla should be called a hack. It’s like when the local newscaster went crazy about the mutilated body found in an isolated area of the state park. By definition, that was a dismemberment. Please don’t call it any different. I made sure all the limbs were separated from the body using saws or hatchets. A hack that I used to make the pieces easy to carry and spread around. If the officers were going to work, they might as well make it fun with a scavenger hunt. I understand not everybody has the time and the talent to be tossing around dough discs. We use what we have and make it work. This is a simple and fun way to enjoy breakfast.

I usually keep mine simple, with only eggs, tomatoes, and cheese. However, Jake has made some with diced peppers, spinach, and even adding basil with the tomatoes right before pouring the eggs. When it comes to toppings, the choice is yours. What you like and what you have at hand will do.

Breakfast Pizza

A new twist on a family favorite dish.

Ingredients
  

  • 1 tomato
  • 2 eggs
  • 1 burrito size tortilla

Toppings

  • cup shredded cheese
  • cup sour cream

Instructions
 

  • Spray skillet with cooking spray and set over medium-low heat.
  • Slice the tomato and arrange it in the skillet, season with salt and pepper.
  • In a separate bowl, beat the eggs. Then pour them into the skillet covering the tomato slices. Reduce the heat to low.
  • When the edges are firm and the center still jiggly, place the tortilla. Press down gently. Let it cook for about 3 to 5 minutes, then flip onto the serving plate.
  • Spread toppings and serve.

Notes

I used a burrito tortilla because my skillet is 12in. You can use whatever size will cover yours.
The topping listed are optional, you can leave it plain or add whatever you have at hand at home.
