Ingredients
For the chicken

Tbsp
oil
2
boneless chicken tights
2
garlic cloves
1
bunch
fresh mint
1
bunch
fresh sage
1
tsp
balsamic vinegar
salt and pepper to taste
For the zucchini
2
medium zucchini
cooking spray
salt and pepper to taste
For the rice
1
pouch
instant brown rice
Instructions
For the chicken
Roughly cut the chicken into similar size pieces.
Peel and mince the garlic. You can use a garlic press if you have one. Mix with chicken. Season with salt and pepper.
Pour the oil into the pan and heat. Add the chicken and cook at medium-high heat, tossing a few times.
Deglaze the chicken with balsamic vinegar.
Roughly chop the mint and sage and add to the pan. Toss to combine.
For the zucchini
Spray a nonstick pan with cooking spray and set heat to medium.
Slice the zucchini and add to the pan. Season with salt and pepper.
Toss a few times, cook until soft.
Cook the rice per package instructions and serve with vegetables and meat.
Notes
You can garnish with sour cream or plain greek yogurt.
