Mint and Sage Chicken

This chicken recipe is an easy healthy option for dinner. It does have familiar flavors that work exceptionally well when combined. After all, sage and mint are the perfect companions for poultry dishes. The fact that you are using ready-to-cook rice makes this dish foolproof. You can even skip the zucchini and make a simple salad instead.

I like the idea of the sage in this dish. Sage is one of those herbs that should be used more often. It is packed with antioxidants, minerals, and vitamins. The herb is most frequently use during Thanksgiving time as an aromatic addition to the traditional stuffing. I think the warmth and complexity of its flavor can take an everyday dish from regular to superb with a simple sprinkle. 

Sage also has plenty of metaphysical attributes attached to it. From ancient Egypt to the First Tribes to modern holistic medicine, the herb has been used to relieve headaches, sore throats, and digestive issues. The burning of sage is common practice to clean the air from germs, bacteria, and free radicals. Also, the procedure can be intentional to repel negativity and evil spirits. After each use, I do a sage cleanse to my utility kit. I want to ensure I wash away the negative energy that might have stained any of my knives, guns, zip ties, gloves, masks, or available tools. I take a physical and spiritual approach to cleaning. I preferably don’t leave any traces of evidence in the tangible or ethereal world. Also, the smell of sage can help improving sleep quality. Something that we all can take advantage of!

You can always use the leftover herbs to create some fancy cocktails. Try to add some mint to a vodka soda or a rum and coke. If you like to sip tequila, add some sage leaves and lime to it over ice. You can also add sage and mint to a Moscow Mule. There you have it, a fancy easy dinner and some drinks to enjoy with it.

Mint and Sage Chicken with Zucchini and Rice

Ingredients
  

For the chicken

  • 2 Tbsp oil
  • 2 boneless chicken tights
  • 2 garlic cloves
  • 1 bunch fresh mint
  • 1 bunch fresh sage
  • 1 tsp balsamic vinegar
  • salt and pepper to taste

For the zucchini

  • 2 medium zucchini
  • cooking spray
  • salt and pepper to taste

For the rice

  • 1 pouch instant brown rice

Instructions
 

For the chicken

  • Roughly cut the chicken into similar size pieces.
  • Peel and mince the garlic. You can use a garlic press if you have one. Mix with chicken. Season with salt and pepper.
  • Pour the oil into the pan and heat. Add the chicken and cook at medium-high heat, tossing a few times.
  • Deglaze the chicken with balsamic vinegar.
  • Roughly chop the mint and sage and add to the pan. Toss to combine.

For the zucchini

  • Spray a nonstick pan with cooking spray and set heat to medium.
  • Slice the zucchini and add to the pan. Season with salt and pepper.
  • Toss a few times, cook until soft.
  • Cook the rice per package instructions and serve with vegetables and meat.

Notes

You can garnish with sour cream or plain greek yogurt.
