- 1 box corn muffin mix
- 1 egg
- ⅓ cup milk
- 1 can green chiles
- 1 lb ground meat
- ¼ tsp cumin
- ¼ tsp chipotle powder
- salt and pepper to taste
Suggested Toppings
- 1 cup sour cream
- 1 cup salsa
- 1 cup guacamole
- 1 cup chopped tomatoes
- 1 cup shredded lettuce
- 1 cup shredded cheese
Preheat the waffle maker to medium.
In a large bowl combine the corn muffin mix, egg, milk, and green chiles.
Season the meat with salt, pepper, cumin, and chipotle powder. In a skillet over medium heat brown the meat.
Add the meat to the corn muffin batter and mix to combine.
Pour the mix into the waffle maker and cook for about five minutes.
Serve with toppings.
You can use any topping that you'll like for your waffles. The ones listed are the most common for tacos.
For ground meat, you can use beef, turkey, or chicken.
If you have a flip-style waffle maker, don't pour all the batter at once. This kind of machine is designed to make thin waffles so you might have an overflow of batter. It may take a few tries to figure it out.
