Taco Waffle

I love the idea of breakfast for dinner, and this recipe fits the bill perfectly. I first came across it in 2015 during Rachael Ray Show Waffle Week. Since then, I have played with the ingredients and found out they can be customized to whatever you have at home. I really like the idea that it can be done for two or for a dozen. Plus, it combines two of the most fun kinds of meals out there: tacos and waffles.

I often compare the waffle maker to the standard screwdriver. They are both grossly underrated, they are relatively inexpensive, and you can find them in various colors and sizes to suit your style. These simple tools can be used for so much more than what they are intended for. I use my waffle maker for cooking store-bought cinnamon rolls, grilled cheese, calzones, hand pies, and heat sandwiches. I use the flat-tip as a scraper, level, and more than once to stab a subject in the temple. The handle works as a stopping guard, and the tip design can be sharpened as a tanto style blade. After the first shock, in about five minutes, everything is done. Many people overlook this multipurpose tool because of the marks it leaves, but I actually like the textured look.

When making tacos or waffles, we all know that toppings are essential. I always try to select garnishes with vibrant colors to elevate the visual impact of the dish. I am not a fan of canary tones, but even I have to admit that the vibrancy of yellow corn salsa next to the bright red tomatoes makes my mouth water a bit. I can’t say the same about the combination of grey matter and blood, not as flaming, more like disappointingly rusty. If you are making this for brunch, you should consider eggs as part of the toppings. Also, flip-style waffle makers are meant to create thinner than usual pieces. Depending on the depth of your grooves, it will take some tries to find out how much batter you can place at a time.

Equipment

  • waffle maker

Ingredients
  

  • 1 box corn muffin mix
  • 1 egg
  • cup milk
  • 1 can green chiles
  • 1 lb ground meat
  • ¼ tsp cumin
  • ¼ tsp chipotle powder
  • salt and pepper to taste

Suggested Toppings

  • 1 cup sour cream
  • 1 cup salsa
  • 1 cup guacamole
  • 1 cup chopped tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheese

Instructions
 

  • Preheat the waffle maker to medium.
  • In a large bowl combine the corn muffin mix, egg, milk, and green chiles.
  • Season the meat with salt, pepper, cumin, and chipotle powder. In a skillet over medium heat brown the meat.
  • Add the meat to the corn muffin batter and mix to combine.
  • Pour the mix into the waffle maker and cook for about five minutes.
  • Serve with toppings.

Notes

You can use any topping that you’ll like for your waffles. The ones listed are the most common for tacos.
For ground meat, you can use beef, turkey, or chicken.  
If you have a flip-style waffle maker, don’t pour all the batter at once. This kind of machine is designed to make thin waffles so you might have an overflow of batter. It may take a few tries to figure it out.
